Gourmet Lent

My friend Christina and I were discussing Lent today, and how we are already bored with peanut butter and jelly sandwiches. My goal this week is to find some fun, packable lunch recipes, but for now, may I present...

My Trader Joe's Lent Survival Kit:

whole wheat gnocchi, polenta, three cheese tortellini, Thai rice noodles, sun dried tomatoes, pineapple, shelled edamame, chickpeas, kiwi fruit and (not pictured): frozen mixed veggies, sweet potatoes, marinara sauce, lentils, beans, rice

Tonight I'm going to be creative and try slicing the polenta and cooking it in the oven - with a sprinkle of shredded cheese and sun dried tomatoes. I can give up meat no problem, but I don't give up dairy and oil until the last week. Anyone have other great Lenten lunch/dinner ideas??
